Our Farm
Cold Pressing
The olives are generally harvested between November and December, when the fruit has reached the ideal stage of ripeness. They are processed immediately after harvesting to ensure maximum freshness. The olives are taken to modern, technologically advanced mills, where they are cold-pressed to preserve their aroma and flavour.
