Honey produced by bees that collect nectar from flowers growing in the high-altitude pastures of the Tuscan mountains is distinguished by its intense, full-bodied flavour, which varies according to the blossoms found in the area. Its many varieties include chestnut, acacia, cherry blossom and heather honey, among others.
Tuscan mountain honey is renowned not only for its unique flavour, but also for its beneficial properties. It is rich in nutrients, including vitamins, minerals and antioxidants, and is traditionally used in natural medicine as a remedy for a variety of ailments.
Tuscan mountain honey is also a highly versatile ingredient in the kitchen. It can be used to sweeten drinks, tea, yoghurt and cereals, as well as to prepare desserts, sauces and marinades for meat and vegetables
A Natural Treasure
The honey extraction process begins by removing the honeycombs from the hives. The honeycombs are then uncapped using a tool known as an uncapping knife, which removes the thin layer of wax covering the honey-filled cells. They are subsequently placed in a honey extractor, a machine that spins the frames at high speed, causing the honey to flow out and collect in a container.
The honey is then filtered to remove any wax particles or other impurities. It is left to rest at room temperature for a few days, allowing any trapped air bubbles to rise to the surface.
Finally, the honey is poured into glass jars and stored in a cool, dry place, away from direct sunlight and sources of heat.
